Chicken Piccata

Enjoy a delicious Chicken Piccata that’s easy to make!
Ingredients
- 4 eggs
- 1 pound of chicken tenders or chicken breasts
- 1 Tsp. of capers
- 3 lemons
- 3/4 cup of white wine
- 1 cup of flour
- Pinch of pepper
- Dry ingredients: garlic salt, onion salt, pinch of salt, pinch of pepper
- 2 Tsp. of unsalted butter
- 4 Tsp. of olive oil
Directions
- Chicken Piccata
- Crack 4 eggs in a small bowl, and stir.
- Mix in a separate bowl, 1 cup of flour, 1 tsp. garlic salt, 1 tsp. of onion salt, pinch of salt, and pinch of pepper.
- Take each chicken breast or tender and dip in the egg mixture and then in the flour mixture.
- On medium heat, add 4 tsp. of olive oil to the pan and add each chicken breast to the pan for 5-10 minutes on each side or until golden brown.
- Squeeze 1 lemon over chicken breasts, add 2 tsp. of butter, ¾ cup white wine, 1 tsp. of capers, and 2 lemons cut into slices to the pan.
- Lower heat to a shimmer and cover for 30 minutes or until chicken is fully cooked.
- Garnish with fresh or dry parsley and drizzle sauce in the pan over chicken.
This pairs nicely with angel hair pasta, salad, or mash potatoes.
