Delicious Lemon-Thyme Mahi Mahi

Ingredients

  • Mahi Mahi Fish (Trader Joes)
  • Coconut oil
  • Dry Ingredients: (thyme, salt, pepper)
  • 1 lemon
  • 1 stick of unsalted butter

Directions

    Lemon Thyme Mahi Mahi
  1. In a microwave safe dish, melt 1 stick of butter, and cook for 1 min. or until the butter is fully melted.
  2. Stir in a dash of thyme, and squeeze half of lemon to the melted butter and set aside.
  3. On medium heat, add 1 tsp. of coconut oil, and sprinkle: salt and pepper and drizzle lemon butter sauce on each side. Cook the fish for 5-10 minutes on each side or until the fish is flaky. (I love to use my cast-iron pan)
  4. Drizzle the remainder lemon butter sauce on each fish and serve.
  5. Pairs nicely with white rice & broccoli.
