Loaded Baked Potato

Continuing our Easter inspired meal this week we have delicious cheesy, bacon, baked potatoes!

Ingredients

  • Foil
  • 5 potatoes
  • 2-4 strips of bacon
  • Chives
  • Sourcream
  • Salt/pepper
  • Shredded Monterey/Cheddar cheese
  • Olive Oil

Directions

  1. Preheat oven to 400 degrees
  2. Cut 5 potatoes in half ( tip to cooking potatoes quickly, puncture holes in potato skin and microwave for 10-15 minutes 3 potatoes at one time with water filled half-way in a microwave safe bowl. Note the potato should easily cut in half after you microwave it)
  3. Place foil on a cookie sheet, and place potatoes 1 inch apart face up, lightly drizzle olive oil on top of each potato, add a pinch of salt and pepper on top.
  4. Bake for 10-15 minutes.
  5. In a separate pan, on medium heat place 3-4 pieces of bacon and cook for 5-10 minutes on each side or until crispy or fully cooked. Remove bacon from the pan and place on a plate to cool. ( Later crumble bacon with hand and set aside).
  6. Finely chop chives and set aside.
  7. Remove the potatoes from the oven and sprinkle on monterey and cheddar cheese on top.
  8. Place in the oven for another 5-10 minutes.
  9. Remove the potatoes from the oven, and add toppings (dollop of sourcream, crumble bacon, and chives.
