Sun Dried Tomato Angel Hair Pasta with Chicken

Home-made sun dried tomato sauce with angel hair pasta and chicken that is sure to delight the taste buds.
Ingredients
- 16 tomatoes (or 2 packs of campari tomatoes on vine) or if you don’t want to make a home-made sauce (1 can of tomato sauce)
- 4 tsp. Heavy whipping cream
- 1 pack of chicken tenders or breasts
- Dry ingredients: garlic salt, oregano, salt, pepper
- Olive oil
- 4 tsp. White wine
- Fresh basil
- 1 White onion
- Minced garlic
- ½ cup Sun dried tomatoes
- 1 pack of angel hair pasta
- Fresh Parmesan cheese (optional)
Directions
- Season chicken breast to taste with garlic salt, oregano, salt and pepper on each side.
- Add 4 tsp. Of olive oil to a pan and cook the chicken breast on medium-heat for 5-10 minutes on each side.
- Reduce heat to low and cover with a lid for 15 minutes or until the chicken is fully cooked inside.
- Remove chicken and set aside to cool. Once the chicken has cooled, chop the chicken into pieces.
- In a separate pot, cook angel hair pasta, follow the box instructions, and drain pasta once cooked.
- Preheat oven to 400 degrees
- Cut the tops off each of 16 tomatoes, and spread-out on a cookie sheet. Drizzle olive oil, and a pinch of salt and pepper on top of the tomatoes. Let it bake for 15 minutes.
- Remove the tomatoes from the oven, and set aside to cool.
- In a blender, add the 16 tomatoes, 2 fresh basil leaves, half an onion, 1 tsp. Of minced garlic and 3 tsp. of olive oil. A pinch of salt and pepper then blend for 2-5 seconds.
- Using a hand-held strainer, take a separate bowl and slowly strain the sauce from the blender through the hand-held strainer.
- On medium heat, add 1 tsp of olive oil, 1 tsp of minced garlic, the remainder diced onions, ½ cup sun dried tomatoes and cook for 2-5 minutes
- Add cooked noodles, tomato sauce, 4 tsp. White wine, 4 tsp. Heavy whipping cream, chopped chicken, pinch of salt and pepper Reduce to low heat and cover for 10-15 minutes or until sauce thickens.
- Garnish with fresh basil and Parmesan cheese.
