Looking for a healthy, homemade meal that tastes great, is inexpensive and time sensitive, try my Easy Lemon Chicken!

Ingredients

  • 1 Lemon
  • 1 pound of chicken tenders or chicken breasts
  • Dry ingredients: lemon pepper, salt, thyme, pepper
  • 1/2 cup white wine
  • 4 tsp. of butter
  • 3 tsp. of Olive Oil

Directions

    Lemon Chicken
  1. Season chicken breast on each side to your liking with: lemon pepper, salt, thyme, pepper
  2. Add 4 tsp of olive oil to the pan and cook chicken breast on medium heat for 3-5 mins. on each side. ( I like to use a cast-iron pan)
  3. Cut lemon in 4 slices, and squeeze 1 lemon slice over chicken.
  4. Add 4 tsp of butter and ½ cup of white wine, and remainder lemon slices to the pan. Note: If you want a lemony chicken squeeze 2 slices or for just a mild lemon chicken 1 slice is fine.
  5. Reduce to low heat, and cover for 20 mins. Or until fully cooked. I like to drizzle some of the sauce from the pan over the chicken.
  6. Pairs nicely with white rice, mash potatoes or salad.
